Anniversary

For our anniversary supper I planned to make one of S's favorite meals, a malaysian dish he loves. Of course I was also planning on photos. Plans!

Plans, of course, often go awry. And this plan was no exception. "Dear, a problem came up at work and I'll be an hour late for supper," he warned me. Thankfully, his warning came early enough. I changed my plans. Wednesday evening's supper became Tuesday's. Wednesday's supper was meatloaf. Much easier to keep warm after T and I had eaten.

He opened the door. With a flourish, he presented- a small bouquet of red roses! That makes the 2nd time this year he's given me flowers. Last time before this year was on our honeymoon. What a delightful, delightful surprise. :)

Instead of my usual meatloaf I decided to mix things up and try another recipe. It will be made again. Had grated cheddar cheese in it. Yum! The baked sweet potatoes were a tasty side, and the corn was sweet and juicy. Of course cooking the corn with a pinch of sugar in the water always helps. It's a tip I learned from a cookbook. S thinks it's a crazy tip but it sure works.

Rearranging the dinners worked well. Wednesday I sliced and marinated the steak. Then- another plan went awry. A headache struck. You know, the kind of headache that makes it impossible to operate and you hope, just hope that your LO can stay quiet so you can nurse that thing and get back into operation. Wasn't to be.

Tylenol didn't help. A dark room didn't help. Neither did closing my eyes. S opened the door. Willingly my DH picked up my laptop and finished sauteeing the vegetables and noodles for supper. I took some advil, hoping that would help. Happily he and T devoured the supper while I lay down on the sofa with closed eyes.

"It's delicious, dear!"

What good medicine those words were.

"It's delicious, dear!"

Not syrup, not honey, not even applesauce

We love to eat pancakes in this house. They're a real treat. Easy to make, but not something indulged in every single day. Most days we eat yogurt and fruit, or eggs, or oatmeal/cereal for breakfast.

Generally a pancake is topped with syrup. Occasionally, honey may be drizzled on. It can be dipped in applesauce. Or smothered in a bubbling hot homemade fruit sauce.

Saturday's pancakes were different.

Much jazzier.

They were spread with a homemade cinnamon sauce.

Delicious!

Yes, S was pretty skeptical, and yes, he tends to be more adventuresome. After trying it everyone was begging for more. All I could think of while eating it was "this is like the ultimate mother's day pancake." I found the idea on the blog "Meemo's Kitchen". <---Try it!

It's a spreadable consistency. When spread on the pancake it hardens. Oh, it's so scrumptious. Try it when you're looking for a different way to serve pancakes one day. Highly recommend this!

Culinary Adventures Ahoy!-Again

Coconut milk. Lime juice. Cumin. Paprika. Tilapia. Onions. Bell peppers. Tomato.

These are ingredients used in last night's international culinary adventure.

I made a Brazilian fish stew.

It turned out quite fine indeed. I think each and every one of us went into last night's supper a little suspicious of the dish. But we all liked it! I find it more alive than the traditional American clam chowder. Much more interesting texture and more flavorful than clam chowder. I'm looking forward to eating it again tonight!

I marinated a pound of tilapia (any white fish should do, that is firmish) in lime juice, cumin, paprika, garlic, salt, pepper. Then I sauteed onions- it needs at least 2- and a couple bell peppers in olive oil, added my fish, and some diced tomatoes. Poured coconut milk on top of everything, and let cook until heated through. Sean and I decided to add more of the seasonings from the marinade at this point to help the flavors pop more. Pop they did! Yum! Cilantro can be added before serving although apparently it's optional (for those of you who dislike cilantro).
I'm looking forward to the leftovers today!

Boxes and Flowers

I packed away 10 more boxes today. It feels wonderful! I'm sure it will make the house feel nicer too to have all the things we aren't currently using packed away for a later date. Plus it encourages me. I'm looking forward to having a yard for my growing little boy to run around in, and not hearing neighbors through my walls all day (especially when they fight)!

Oh, and I've been planting more flowers. Sure, my allergies bother me after each planting. Yes, I still have to jump right in the shower to get all the pollen off. But guess what? It doesn't leave me sick! I couldn't garden last year due to getting sick every. Single. Time. I. Took. T. Outside. Or. Did. Any. Outdoor. Activity. It was such a bother- and so miserable. Thank God for allergy shots. Immunotheropy certainly isn't a cure-all. I feel my allergies as I type. But I'm not sick from them. Praise God!

Sure, I'll post pictures when I've planted more. May take a little while. They'll be here though!
